This cake mix hack makes chewy cookies that rival Subway

They only require three ingredients!

 

I’ve seen an increasing number of recipes online that use packets of cake mix to make things that aren’t the expected box cake creation. So I decided to try my hand at ‘3-ingredient cake mix cookies’ to find out if they are worth the hype.

Put simply, they definitely are

If you like your baking exploits to be as simple as possible, this one’s for you. I was incredibly sceptical about how these would turn out, but after one bite I was converted - they taste exactly like the soft, chewy cookies you get at Subway.

While they are nearly impossible to mess up - there are some tips to ensure they turn out as perfectly as possible.

Here’s what you need to do…

Gather these ingredients:

  • 1 packet of cake mix (or brownie mix)
  • 2 eggs
  • 1/3 cup of vegetable oil
  • sprinkles (optional)

For my first attempt I decided to use the cheapest, plainest vanilla cake mix … and then I added a hefty amount of hundreds and thousands to give it a ‘funfetti‘ look.

You bung these things together in a bowl and combine until you have a cookie dough:

Roll this dough into small balls and place on a lined baking tray. (Don’t put more than 12 cookies on a tray - they will spread!)

The BIG secret for success

My mother always told me that the secret to good cookies is to never bake them longer than 8 minutes … and these ones I removed from the oven after just 7 minutes in a 200C oven.

Even when they cool down, they won’t lose their soft, chewy texture.

When I knew that these cookies were a hit, I whipped up another batch using a Betty Crocker brownie mix. I bought these into the Kidspot office where it was decided that these tasted even better than the vanilla ones. (Duh!)

The verdict

Fewer ingredients to buy/throw together make these cookies SO fast to put together. I’d prepped and put four batches through the oven in just 40 minutes!

Also, the ability to use any cake mix as a base allows room for some really interesting creations. Red velvet cookies. Caramel cookies. Gluten-free cookies. The world is your cake mix based oyster!
